Tomato Sauce





0,2               ltr                Olive Oil / Vegetables Oil

150              gr                 Bacon Trimming

Mirpoix:

200              gr                 Carrot

100              gr                 Celery

100              gr                 Onion

½                 leaf               Bayleaf

2                  spring           Thyme

2 – 2,5         kg                 Tomato Puree atau Fresh Tomato

100              gr                  Flour

12                ltr                  White Stock

80                gr                  Sugar

20                gr                  Salt

Method:

  1. Panaskan oil, dan saute trimming bacon dan mirpoix di pot stock hingga mirpoix empuk.
  2. Tambahkan tomato puree, sambil terus di saute dan diaduk lalu masukkan flour.
  3. Lalu tambahkan white stock dan aduk rata, biarkan beberapa saat hingga white stock mendidih lalu simmer 1 hingga 1,5 jam.
  4. Lalu masukkan sisa white stock jika diperlukan.
  5. Saring lalu masukkan sugar dan salt

Yield: 10 Liter.
